Mt Laurel welcomes opening of La Paz Mexican Restaurant

MT LAUREL – Mt Laurel residents are thrilled to only be a short walk or golf cart ride away from delicious, fresh Mexican favorites such as tacos, enchiladas, salsa, cheese dip and margaritas at La Paz Mexican Restaurant, which is now open.

Located at the main entrance on Mt Laurel Avenue, La Paz welcomes guests with a beautiful restaurant inside and a festive stone patio and lounge outside.

In addition to offering some of the best Mexican food and margaritas around the Birmingham area, the new restaurant has a special Mt Laurel connection.

Mt Laurel resident Cannon Prickett is one of the four partners in the Red Mountain Investment Group that has owned and operated the Crestline La Paz location for 10 years and is now operating the Mt Laurel La Paz.

Pricket, his wife Kristin, and their four children live in Mt Laurel, so they’ll be just steps away from the restaurant.

Cannon Prickett is also the owner of Prickett Properties, which has an office in the Town Center.

“We’ve lived in Mt Laurel for five years and love it,” Prickett said. “We are thrilled to live and work in Mt Laurel, and now we are so pleased to have the restaurant here also.”

Prickett’s parents, Cindy and Jack Prickett, also live in Mt Laurel.

Kristin Prickett, who owns the design company Olivia Charles Interiors, designed the interior and outdoor décor for the new restaurant.

Both areas are filled with artistic and unique touches that include reclaimed wood throughout and handmade Mexican tiles on the bar and many of the tables. Each tile is handmade and fired in a special kiln, so no two tiles are exactly alike. Many of the furniture pieces are custom-made for the space.

A distinctive metal sculpture will greet guests as they enter the restaurant. It was designed by a Wilsonville company, Rusty Rooster Metal Works.

Three other Rusty Rooster pieces were commissioned for the restaurant: the front sign, one inside the main dining room and one other on the outdoor stone fire pit.

This La Paz will be different from the Crestline location by having outdoor areas around the restaurant and a small private dining room inside.

The front and side outside area will be an outdoor lounge for appetizers and drinks.

In the rear, guests can enjoy an open fire pit and a covered dining area. Each of these spaces may be reserved for private parties.

The private dining room inside will seat 20 people and have audio and video connections for business meetings.

La Paz is now open from 4-10 p.m. Tuesdays through Sundays.
