Nadine Joiner’s Pineapple Casserole

Joiner works at the Shelby Baptist Association, and said that she enjoys cooking the dish around the holidays, and that it goes well with a turkey or ham meal.

1 (20 ounce) can of pineapple tidbits

1/2 cup sugar

6 tablespoons flour

6 tablespoons pineapple juice

2 cups grated cheese

2 cups toasted breadcrumbs

1 stick margarine

Drain the pineapple, saving juice; mix together the sugar, flour and juice. Add pineapple and cheese. Stir both mixtures together until thoroughly mixed. Pour into buttered casserole. Melt a 1/2 stick of margarine and add breadcrumbs. Crumble over pineapple mixture and bake at 350 degrees for 30 minutes.
