Janet Clark’s Yankee Pleaser Casserole

1 pound spicy or sage sausage — cooked and drained
3 cups grated cheddar cheese
3 eggs, slightly beaten
1 cup cooked grits
1 package Jiffy corn muffin mix
1 3/4 cup hot milk
1/2 cup butter, melted
Preheat oven to 350 degrees. Grease a 2-quart casserole dish and then layer sausage and one cup of cheese. In a bowl, combine eggs, muffin mix, milk, butter and grits.
Pour over sausage and cheese. Top with remaining cheese. (May be refrigerated at this point.)
Bake at 325&161; for 40 minutes or until middle is set.
