Sweet Tomato Pie

2 medium red tomatoes

1 medium onion

1 medium yellow tomato

1/4 cup butter

1 medium green tomato

1 cup Italian blend cheese

1/4 cup mayonnaise

1/4 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup Parmesan cheese

2 refrigerated pie crust


Slice tomatoes and lay on a paper towel. To absorb the excess liquid, take butter and add to skillet and slice onion and carmelize. Only cook until the onion is clear. Mix mayo, Parmesean cheese and Italian seasoning together.

Lay the crust in the bottom of a deep pie dish. Lay the red tomatoes in the bottom. Rub with the mayo mixture and sprinkle with cheese. Lay some of the onion over the tomatoes. Lay the yellow and green tomatoes alternately. Repeat the mayo, cheese and onion layers. If there are any red tomatoes left, lay on the top and add a little more mayo and cheese.

Cover with the other pie crust and crimp together to make a pretty pie. Cook on 350 degrees for about 30–40 minutes. The crust will turn a light golden brown. Slice and enjoy.
