MONTEVALLO – Members of the Montevallo Evening Garden Club had the chance to attend their annual Christmas gathering at the newest restaurant to open on Montevallo Main Street.

Indigo Cafe and Bar is planning its official opening on Monday, Dec. 18 but it is catering a number of private events beforehand as a way to build up to the grand opening.

“We’ve taken the last week to really work on food and training service so that everyone’s confident,” Indigo Cafe and Bar’s owner Indigo Aulbach said. “Confidence is key in this business.”

Garden club members were served a starter of homemade chicken noodle soup, butternut squash bisque, mixed green salad or Caesar salad; a main course of fettuccini with chevre white sauce, tomatoes and fresh herbs, smoked St. Louis ribs with grit cakes and sautéed green beans, Cassoulet Americane with duck confit over white beans and Conecuh stew, or wild salmon with Napa cabbage, tomato and beurre blanc.

“It is not just about the food, listen, I make phenomenal food,” Indigo said. “My chicken noodle soup will bring tears to your eyes. But it’s not just about that. It’s about welcoming someone in and making them feel whole with food with music, beautiful art on the walls, kindness, real genuine hospitality and going out of our way to be an important part of the community.”

Being part of the greater community is important to Aulbach as it is what initially inspired him to open a restaurant in Montevallo.

“My daughter moved out here last year for college and I followed shortly thereafter because I missed her,” Aulbach said. “I was like, this is just an amazingly beautiful perfect Americana town. It has such a wonderful southern charm.”

Aulbach’s Indigo Cafe and Bar plans to be an affordable and delicious addition to Montevallo’s culinary scene. The restaurant will be open Monday through Thursday from 7 a.m. to 4 p.m., Friday and Saturday from 7 a.m. to midnight and Sunday from 10 a.m. to 4 p.m. Indigo Cafe and Bar will serve breakfast, lunch and dinner Monday through Saturday, with a brunch on Sunday.
